Spanish Rice... Bueno!

Billy and I are always buying the boxes of Spanish rice to eat at home but they never taste like the restaurant! I think we have found an easy recipe to fill our void!!!

What you need:
2 tbl vegetable oil
1 cup uncooked rice (we get the Uncle Bens whole grain white rice in the box- its the best)
1 small onion chopped
1/2 green pepper chopped
2 cups water
1 10-ounce can diced tomatoes and green chiles
1 tsp chili powder
1 tsp salt

Heat oil in deep skillet over medium heat. Add rice, onion, green pepper and sauté until rice is slightly brown and onions are soft

Stir in water, tomatoes, chili powder, and salt. Cover and simmer 25 minutes. Remove lid and cook on low for 5-10 more minutes until most of the liquid is evaporated.

New York City the weekend before Christmas!

My hubby and I decided to pack up and ditch town for a few days instead of buying each other Christmas presents out of the same checking account:) NYC in December is Amazing to say the least! The city is decorated with bright lights, busy people, and all the holiday cheer you can imagine! Here are some pictures to give you a glimpse of the memorizing memories we made!

Cake Cookies

You'll Need:
1 package yellow cake mix (or: red velvet, chocolate, white)
2/3 cup dry oatmeal
1 stick butter
1 egg
½ cup seasonal M&Ms


  1. Preheat oven to 375 degrees
  2. Melt butter slightly (about 20 seconds so it is not all liquid but very soft)
  3. Combine Cake Mix, Oatmeal, butter, egg with electric mixer until mixed well
  4. Add in M&M and mix by hand
  5. Roll into ball and drop on cookie sheet
  6. Bake 10-15 minutes until tops are slightly golden
